Guy needs a ride to a new gig.
Encounter: Guy is in Star Junction and needs a ride to a new gig while he "prepares" in the back of the car. Get him to the gig and remember, if the limo is rockin', don't come a knockin'. Reward: $75
Races
Races consist of both time trials and street races. For the time trials, you have to complete the course with a particular vehicle, located near the course. For the street races you can use whatever choice you want. There are always vehicles parked outside of where you sign up for the race as well as the ever present vehicles available for jacking off of the street. Whatever race you're doing, mind your corners and try to avoid anything that might wreck your vehicle. Other than that, these just take skill and repetition so that you can learn the courses. To count towards 100% you have to get a bronze medal in each race, however getting gold will net you new vehicles.
Once you attempt a time trial, or one race in a street race series, the location of the time trial vehicle or the street race sign up board will be saved to the "Odd Jobs" section of your GPS. Helpful if you need to bail out on a jet ski race to go deal some coke.
Street Races

S&M Grand Slam - Head to the Auto Sales building in Chase Point, Bohan for this sign up board. Races include the Bohan Rally and Bohan Classic.
Time Trials

Boulevard Boogie Time Trial Course 1 - 4: You're on a Sanchez for these races. The bike can be found in a park in the Boulevard section of Bohan.
Wetscapade Time Trial Course 1 - 4: Everyone likes a good wetscapade now and then. Find the jet ski south of the Algonquin entrance of the Algonquin bridge, get on it and race four times. Don't forget to use your right bumper for tighter turns.
Patriot Park Time Trial Course 1 - 4: Head to the northern part of Middle Park in Algonquin and climb aboard your Patriot to win one for freedom! Well, four actually.
Dukes Dust Up Time Trial Course 1 - 3: Use the Sultan in Meadows Park, Broker for these races.
Loose Exchange: For this one you need go get into the Cavalcade in the construction yard in Castle Gardens, Algonquin. Once in it, follow the checkpoints and do your thing.
Midtown Mayhem: Another Sultan, this time in the Meat Quarter section of Algonquin.
East Side Escapade: Find a Banshee in Lancaster and you're half way towards winning. The other half involves actually winning. It's a big half.
Graveyard Groove: If it's a graveyard, it must be a Hearse. Head to the Steinway section of Broker and be mindful of your passengers. Just because they're dead doesn't mean that they don't deserve a nice ride.
Beach Blitz: You'll find a Sabre GT in a driveway in Beach Gate, in the southern part of Broker.
Monument Mania: Find the Angel bike in South Slopes park, Broker for this one.
Bohan Snake: There's a Hellensback in the Industrial section of Bohan. Get to it and knock this one out.
Fast Tracks: Get the Rhino tank outside Francs Airport in Broker and go to town. Don't forget, shooting the red cars takes time away, shooting the blue cars adds time.
Odd Jobs
Despite the fact that the races get saved as Odd Jobs in your GPS, this next section contains activities which really are odd jobs. Well, as much as killing zombies can be considered a job. That's more like a hobby. The same rule applies here as with the races, you only need to get a bronze medal for the activity to count towards 100% however you'll get substantial benefits for getting gold medals in everything. In fact, it may be worth it to do these before you get too far along in the story missions so that you can enjoy the benefits for as long as possible.
Vigilante: Like in previous GTA games, you can start any vigilante missions by stealing a cop car. Once in the car, press the start button to begin. You'll be given the choice of three crimes to foil, so pick one and then follow the GPS route to the bad guys. To get a gold medal you'll have to complete all five waves and kill every last dirty, stinking criminal. Getting a gold medal nabs you double armor which is hella sweet. Once you have double armor a normal armor pick up will fill you up double, so no extra pick ups are necessary.
Tattooing: There's a tattoo parlor in Cerveza Heights, Broker. The only thing you have to do here is do as many tattoos in a row as you can however you need to do a minimum of ten to get bronze. Your only reward is cash for the number of tattoos you complete. Take your time so that you don't get kicked out for an awful tattoo but know that you have a time limit.
Taxi Driver: Similar to the vigilante missions, to become a taxi driver, all you have to do is steal a taxi. Once in the taxi, press the start button to begin. As a taxi driver you have to pick up fares and deliver them to their destination before the time runs out. Additionally, some fares may want you to drive carefully, or throw caution to the wind. Your GPS helps here, but remember that the GPS only shows the shortest legal option. Sometimes a good taxi driver needs to go off the straight and narrow. Win a gold medal and you'll get the bulletproof taxi.
Paramedic: Ambulances can be found throughout Liberty City any time there's an accident. Additionally you can die and grab one outside of the hospital you end up at. Or, you can just go to a hospital such as the one in North Holland, Algonquin. Once in the ambulance, press start to begin. If you grab one while you're out and about you'll have to drive to within range of the hospital to pick up the radio signal then you can go and start picking up passengers. You'll have to complete five waves of passenger pick-ups and have every passenger live to get gold. If you crash around on your way to the hospital your patient will flat line, so tap the body symbol on the lower screen. Don't dawdle to avoid this though as you can have patients die en route because you take too long. Get gold and unlimited sprint is yours.
